A healthy breakfast spiced pancakes (Pudla)
- INGREDIENTS
- 1 cup Besan (Chickpea flour/ Gram flour)
- ¼ cup rice flour
- ¼ cup wheat flour
- ½ cup corn flour
- 1 onion grated
- 100g chopped Fenugreek leaves
- ¼ tsp Turmeric powder
- ¼ tsp Red chili powder
- 1 tsp ground coriander
- 1 tsp ground cumin powder
- 1 tsp garlic paste
- 1 tsp ginger paste
- 1 tsp lemon juice
- Pinch of Bicarbonate
- 2tbsp buttermilk / or soya yogurt for Vegan
- 1 to 2 cups of water (or as you need it) batter should be thin like pouring cream
- Salt to taste
- 1 tbsp sunflower oil plus 5tbsp for cooking
- METHOD
- In a bowl combine all the ingredients plus 1 tbsp. oil
- Just add ½ cup of water to make a thick batter and whisk it hard so that no lumps remain. Then add enough water to make the batter of a dropping consistency – not too dilute.
- Heat frying pan and add ¼ tsp oil. Pour 2 tablespoon of batter in a frying pan and spread it out like a crêpe. On a medium low gas flame cook from either side till it is evenly brown and crispy.
