Spiced Pancakes

A healthy breakfast spiced pancakes (Pudla)

  • INGREDIENTS
  • 1 cup Besan (Chickpea flour/ Gram flour)
  • ¼ cup rice flour
  • ¼ cup wheat flour
  • ½ cup corn flour
  • 1 onion grated
  • 100g chopped Fenugreek leaves
  • ¼ tsp Turmeric powder
  • ¼ tsp Red chili powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin powder
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp lemon juice
  • Pinch of Bicarbonate
  • 2tbsp buttermilk / or soya yogurt for Vegan
  • 1 to 2 cups of water (or as you need it) batter should be thin like pouring cream
  • Salt to taste
  • 1 tbsp sunflower oil plus 5tbsp for cooking

 

  • METHOD
  • In a bowl combine all the ingredients plus 1 tbsp. oil
  • Just add ½ cup of water to make a thick batter and whisk it hard so that no lumps remain. Then add enough water to make the batter of a dropping consistency – not too dilute.
  • Heat frying pan and add ¼ tsp oil. Pour 2 tablespoon of batter in a frying pan and spread it out like a crêpe. On a medium low gas flame cook from either side till it is evenly brown and crispy.
